Yeast started being produced in large quantities only 150 years ago. However, our ancestors successfully baked yeast-free bread with sourdough using various methods. This bread has excellent quality and taste.
The feature of yeast-free bread with sourdough is that it retains its softness for up to a week and does not mold!
How to Prepare a Sourdough Starter for Yeast-Free Bread
A simple way to create a sourdough starter for yeast-free bread is based on flour and water.
You will need a 1-liter glass jar, any flour (rye or wheat), and clean non-boiled water (preferably not from the tap!). The quality of the water is half the success, so it's better to use bottled or spring water.
The sourdough will mature for several days at room temperature; in winter, you can place it closer to a heat source. Be patient and let's start cooking.
Day 1. Mix 100 g of flour with 100 ml of room temperature water. Pour the mixture into a jar and cover the neck with cheesecloth. Mark the level of the mixture on the jar with a marker—this will help track the process.
Day 2. Remove half of the contents from the jar and add a fresh mixture of flour and water (1:1) up to the level marked on Day 1.
Day 3. On the third day, the sourdough will start to bubble and emit a pleasant sour smell. Repeat the process: remove half of the contents and add a new portion of flour with water (1:1) to the marked level.
Day 4. The sourdough will double in volume compared to Day 1. It is ready for use in baking bread.
Preparing Yeast-Free Dough for Bread
Ingredients for the dough: flour (2.5 cups + 0.5 cup for dusting), water (1 cup), vegetable oil (2 tbsp - in the dough; 1 tbsp - for greasing), salt (2 tsp), sugar (2 tbsp leveled), sourdough (6-7 tbsp).
Sift the flour, add salt, sugar, and vegetable oil, and mix thoroughly. Gradually add the cup of water, kneading the dough until it begins to pull away from your hands.
Cover the dough with a towel and leave it in a warm place. When it has doubled in size, punch it down and place it in a mold, filling half its volume.
The dough should rest in the mold for at least 2 more hours. When it doubles in size again, grease the top with oil and place it in the oven.
Baking Sourdough Bread
Baking sourdough bread is simple! Preheat the oven to 160°C and put the mold with dough inside. Bake for about 1.5 hours until ready. Once cooked, take the bread out of the oven and place it on a wooden rack, covering it with a clean towel.
Wait for it to cool and enjoy your bread!
